Cranberries & Walnuts Bread
My son said that I blogged my daughter's favourite foods more than his.
So, I promised to make Quiche for him and alas, since my wrist is in pain,
I opted to make Cranberries & Walnuts Bread for him.



2 cups of flour with 1 tablespoon baking powder (shifted)
and 1 cup of caster sugar.
1 egg (lightly beaten), 1 cup of milk and 1/4 cup corn oil.
1/2 cup toasted walnuts and 1/2 cup dried cranberries.



Combine egg, milk and corn oil.



Combine flour and caster sugar.



Mix flour and caster sugar until well and
make a well in the center.



Add in the combined egg mixture and stir until well.
Do not stir too much. It is ok eventhough the batter is lumpy.



Fold in walnuts and cranberries until well combined.



Look like this....please do not mix too much.



Take out the prepared baking tin lined with greased paper.



Pour in the batter and bake at 180 Degree Celsius
for 1 hour or until done.



Once done, take it out from the oven and let it cool for 15 minutes.



Then take out the bread from the baking tin
and cool completely on wire rack.



Once cool completely or store overnight....you can cut it
and eat with a cup of coffee, tea, milo or any of your hot
favourite drinks.
My husband told me that it will taster better if we toast it and
he will be doing it for tomorrow breakfast.
