Braised Pork In Dark Soya Sauce

My dear Stephanie Chua (friend and colleague) gave me this recipe, when told her that I am not sure what to cook during this long weekend holiday. She suggested this recipe and it is her husband favourite dish. I never regretted cooking this dish because it came out superb and tasty. My family loved this dish. Thank you Stephanie for sharing this dish with us.





One Clove of Garlic (wash, drained and cut away the top and bottom)

2 Tablespoons Soya Sauce
2 Tablespoons Oyster Sauce
1 Tablespoon Dark Soya Sauce
1 Teaspoon Pepper
(mix all the sauces with pepper together)

1 1/2 Tablespoons Caster Sugar

3/4 Cup Water

3 Tablespoons Cooking Oil

Pork Belly (Fah Yoke in Chinese Translation)
- Wash, drained and cut into slices (thickness depends to your preferences)
(I forgotten to weight the pork. Anyway, the pork belly cost me RM9.00)




Step 1
Heat up the pot and pour in cooking oil.
[I love to use pyrex to cook.
It can cook on top of the stove and serve at the dining table
without any hassle to transfer the food from the pot to the serving plate.
Save a lot of washing.]




Step 2
Once the oil is heated, pour in the sugar and stir a few times.




Step 3
Let the sugar caramelised.




Step 4
Pour in the pork belly and stir a few times (don't stir too long).




Step 5
Pour in the sauces and 3/4 cup water and stir for few times.




Step 6
Cover and braise for 30 minutes with medium fire.




Step 7
It look like this after 20 minutes.




Step 8
After 30 minutes and if you are satisfied with the remaining sauces,
then switch off the fire.
If you feel that there is too much of oil on top, then by all means, scoop it out.
[Note : Don't be alarmed, the extra oil came from the fat of the pork belly.]
