Cranberries Cupcake
Do try baking this healthy cupcake using cranberries.



75g butter (at room temperature) or margarine.
80g caster sugar.
One egg.
2 tbsp milk (at room temperature).



100g self raising flour and 1 tsp baking powder.
(shift 3 times)



75g dry cranberries.

(I mix some flour into the cranberries to prevent
the cranberries from sinking to the bottom.)



Beat butter or margarine and caster sugar until pale in colour.



Pour in the egg and beat (1/2 minute only).
DO NOT OVER BEAT!



Pour in the milk and beat (1/2 minute only).
DO NOT OVER BEAT!



Pour in the flour and fold the mixture.



Then pour in the cranberries and fold the mixture again.

(As mentioned earlier....please do not over mix the mixture.)


Prepare the paper cases in the muffin tray.



Scoop or spoon the batter into the paper cases.

(Fill the batter about 2/3 of the paper cases.)


Gorgeous and healthy cupcake...
