Durian Cake

Durian Cake
"Durian" - To the Asians, it is King of the Fruits!
To the Westerners, it has a rotten smell.

We had some Durian leftovers and my husband suggested to me
to bake Durian Cake instead of throwing it away.
Yeap! we have a lot of left overs because in the end,
I baked two round sized and two rectangular sized cakes.

Well, our neighbours and my colleagues will be having happy faces
today and tomorrow....you know what I mean!!!

Firstly, we have to make Durian puree.
Get ready around 9 pieces of Durian.

Use back of knife and take out the Durian flesh
and discard the seed.
180g Durian Flesh that we need.

Pour the Durian Flesh into the food processor with
4 tablespoons of whipping cream and process until fine.

250g butter
180g caster sugar
4 eggs

Durian Puree
240g self raising flour mixed with 1 tablespoon of custard powder
(sifted twice)

Get ready 1 round baking tin and 1 rectangular baking tin
and lined with baking paper.

Pour the butter and caster sugar into the cake mixer and
beat until light and fluffy.

Beat in egg one at a time.
In between, please pour in 1 tablespoon of self raising flour
to avoid the batter turn into curdle.

Then, pour in 1/2 of the self raising flour and beat until combined.

Pour all the Durian Puree and beat until well combined.

Lastly, pour in the balance of the self raising flour and
beat until combined.

It is done when all has been well combined.

Pour the batter into the two baking tins and
bake for 60 minutes or until done.

Once done, take it out from the oven and let it cool for 15 minutes.

And turn into serving plate and cool further.

My son keeps on complaining that our whole house today
full of Durian smell and I have sprayed one whole can of Lemon Fresheners.

To the Durian Lovers, bake it...you sure will love it.
