Salted Egg Yolk Cornflakes
Nowadays, everyone crazy on all food related to Salted Egg Yolk and
since it was a long holiday in Malaysia, I took the time to make this snack.
Didn't regret making it because everyone gave a thump up even though it is spicy.



 Ingredients :-

  1. 200g Cornflakes (I used Kellogg's) 
  2. 100g Butter
  3. 8 Salted Egg Yolks (steam 15 minutes or until cooked and mash finely)
  4. 20g Curry Leaves (wash and drain)
  5. 15 small Chilies (it was spicy, next round will reduce to 10 only) (wash, seeded and slice thinly)
  6. 100g Caster Sugar



 Method :-

  1. In a wok, melt butter and add mashed salted egg yolks and stir frequently until foamy.



 Method :-

  1. Add Curry Leaves, Chillies and Sugar and stir for 3 to 4 minutes.
  2. Add Cornflakes and stir until well combined, switch off fire and leave in the wok while you transfer to baking tray.



 Method :-

  1. Spread coated cornflakes on a baking tray and bake for 5 minutes or until golden brown and stir once during baking.  Baking it to make the cornflakes more crispy.  If you find it troublesome, do omit the baking method.
  2. Cool at room temperature and store in air tight container.  (As what Sonia said, not too long to avoid lost of crispiness).



Well, no need to wait for Chinese New Year or any special occasion. 
Just make it and snack on it immediately.
