Spicy Peanut with Silver Anchovy
We will be celebrating Chinese New Year (Lunar New Year) less than a month.
I bet some has started spring cleaning their houses, baking cookies, making snacks or
shop for new clothes.  As for me, spring clean yet to start but I have started making snacks
since last week.  Today is one of them. Spicy Peanut with Silver Anchovy is great snacking with 
wine, beer and any other drinks.  It is yummy to be served for your guests.


 Ingredients :-

  1. 1.2 kilogram of Peanuts
  2. 15 pcs of Dried Chilies (wash, dry, discard seed and cut to 2 inches).
  3. 15 g Curry Leaves (wash and dry).
  4. 120 g Silver Anchovy.
  5. Cooking Oil.


 Method to fry Silver Anchovy :-

  1. Heat up cooking oil with high fire until you notice bubble appear when you put in the chop stick.
  2. Add Silver Anchovy and fry until slightly brown with medium fire.
  3. Dish out and blot with paper towel and set aside.


 Method to fry Peanut :-
  1. Heat up cooking oil with high fire until you notice bubble appear when you put in the chop stick.
  2. Add all Peanuts and fry with high fire for 5 minutes.
  3. Add Curry Leaves and Dry Chilies and turn the fire to medium.
  4. Keep on frying and stirring until slightly brown or cook. (Please do not leave it unattended)
  5. Turn on to high fire and fry another 2 to 3 minutes. (Remember not to over brown the peanut because after you have dished out from the pan or wok, the peanuts will still turn brown while cooling)
  6. With slotted spoon, dish out and place on top of the paper towel.



 Method to mix the fried Peanut with Dried Anchovy :-

  1. Sprinkle some fine salt and mix thoroughly.  Not too much because the Silver Anchovy is salty also.
  2. After blotting the oil from the Peanut. (I also used few pieces of paper towels to blot from the top of the peanut).
  3. Transfer the fried Peanut to a big container and add fried Silver Anchovy and mix thoroughly.
  4. Add more salt to taste again.


While I was mixing and preparing to transfer to small container, 
my husband in and out snacking on it.
I know I have gotten his heart on this snack.
