Unbaked Cheese Cake
My kids love this unbaked cheese cake. Do try it out.
2 x 250g cream cheese, soften at room temperature
20 square pieces of crackers (You can use other type of biscuits)
2/3 cup butter, melted and cool
2/4 cup caster sugar
1/2 cup whipping cream
3 teaspoons of gelatine, dissolve into 1/2 cup boiling water
1) Mix the cracker crumbs with butter and press into your favourite pie dish or muffin tray and then chill in the fridge.
2) Beat cream cheese, whipping cream, caster sugar and melted gelatine until smooth.
3) Pour into the pie dish or muffin tray and chill for 3-4 hours or overnight.

To avoid making a mess while cutting the finished cheese cake, you can lay a piece of aluminium foil into the pie dish and lift out the whole cheese cake before cutting
Crackers - you can use food processor to make the crumbs
Pour the cracker crumbs into pie dish and use the back of the spoon to level it
Look this this after levelling with the back of spoon (chill it in the fridge for 15 minutes)
Or if you do not have pie dish, you can use muffin tray (chill it in the fridge for 15 minutes)
Beat the cream cheese, caster sugar, gelatine and whipping cream until smooth
Pour the beaten cream cheese into the pie dish (make sure to chill it 3 to 4 hours)
Or pour the beaten cream cheese into the muffin tray (make sure to chill it 3 to 4 hours)
