Steamed Kaya Cake

Tomorrow will be Monday and I need to prepare
snack for my daughter to bring to school and
my son for his breakfast before going to college.
Since I am lazy to bake cake,
I thought of this simple recipe "Steamed Kaya Cake"
"Kaya" is Bahasa Malaysia language for Coconut Jam.
This kaya is made from coconut, sugar and steam for few hours before
turning into paste. It is very aromatic and sweet.
It is delicious to be eaten by spreading on top of toasted bread.




Line a 9 inches round cake tray or square tray




5 eggs
180g caster sugar
1/2 tablespoon of ovalette




200g plain flour
1 tablespoon baking powder
100 ml fresh milk
100g kaya




Pour in the eggs, sugar and ovalette




Beat until light and creamy




Then, pour in the flour and baking powder




Beat until combined




Pour in the milk and beat until combined




Once well combined, turn off the beater




Pour half of the batter into the lined baking tray




Once the water from the wok is boiling,
put the baking tray into the wok and
steam for 10 minutes




Once steam for 10 minutes, take out and
spread the kaya on top




Once you have spread the kaya,
pour the balance of the batter and steam for another 15 minutes




Once steamed, let it cool (around 1/2 an hour)




To loosen the steamed cake,
take the back of the knife and run through the cake
and flip over the steamed cake on to the serving plate
and cut into desired sizes




The Steamed Kaya Cake is sweet and fluffy.
Best eaten with hot Milo or Coffee or..........
