Blueberry Muffin

Blueberry Muffin
Last two days ago, sudden crave for muffin, since today is Wesak Day and public holiday
for us, early in the morning baked this Blueberry Muffin for our breakfast.
Muffin indeed moist and fruity taste from the blueberry.

 Ingredients :-

  1. 280g Plain Flour
  2. 1 tbsp Baking Powder
  3. 1/2 tsp Salt
  4. (Note : Plain Flour / Baking Powder / Salt - sift together in a large bowl)
  5. 150g Frozen Blueberries (thaw at room temperature)
  6. 115g Brown Sugar
  7. 2 Eggs (thaw at room temperature)
  8. 250ml Milk (thaw at room temperature)
  9. 85g Butter (melted and cooled)
  10. 1 tsp Vanilla Exract (didn't use this because no stock in my pantry)
Note : Preheat your oven at 200 Degree Celsius and line muffin baking tray with 12 paper cases.


 Method :-

  1. Shifted plain flour, baking powder and salt in a large bowl.
  2. Add brown sugar and blueberries and stir well and set aside.
  3. Quickly to lightly beat the eggs in a large bowl and add in milk, butter and vanilla extract (if you have it) until well combined.
Method :-
  1. Make a well in the centre of the dry ingredients.
  2. Add the beaten liquid ingredients into the dry ingredients.
  3. Gently stir until combined (please do not over mix).  It is ok if it is lumpy or has some flour.
Note : Your muffins will be dense if you over mix the batter.

Method :
  1. Prepared lined muffin baking tray.
  2. Use ice-cream scoop to scoop the batter into the muffin paper cases.
  3. Bake at 200 Degree Celsius for 20 minutes, golden brown and firm to touch.

 While I was baking this early in the morning, my hubby walking in and out of the kitchen,
must be can't wait to have a bite....LOL
