My son and I just love raisin very much
and here it is "Raisin Cupcake".
Hope you all will love it also.
95g butter or margarine
95g caster sugar
1/2 tsp vanilla essence
1 1/2 tsp black treacle (omit it, if you do not have it)
110g self raising flour
Beat butter or margarine, caster sugar and vanilla essence
until light and fluffy.
Add egg one at a time and beat well after each addition.
If you find your batter curdle while beating the egg,
pour in 1 tablespoon of flour into it. If not, your cupcake
will become denser.
Stir in black treacle and beat.
Pour in the flour and beat well.
Pour in raisin and beat well and until done.
Scoop batter into paper cup cases and
bake for 25 minutes or until done at 190 Degree Celsius.
