Salted Eggs Chicken

Salted Eggs Chicken
 Happy New Year 2017
With the English New Yew and coming Chinese New Year,
this will be the best dish for this celebration.
Cooking this dish requires some preparations but the end result will be amazing.




  1.  3 whole boneless and skinless Chicken Legs (for 4 persons will be too much. 2 whole Chicken Legs will be enough). Cut into chunks.
  2. 2 tsp Sugar, 2 tbsp Cooking Rice Wine, 1/2 tsp Pepper and 1 tsp Salt.
  3. 1 Egg.
  4. 1 cup Potato Starch.
  5. 4 tbsp cooking Oil.
  6. 5 Salted Eggs.
  7. 2 tsp minced Ginger, 2 tsp minced Garlic.
  8. 1 tbsp cooking Oil.
  9. 20 Curry Leaves.
  10. 2 - 3 Chilli.
  11. 40 g Butter.




  1.  Steam the Salted Eggs (yolk only).
  2. Mash the salted eggs until finely.
  3. Heat up 4 tbsp cooking Oil.
  4. Add the Salted Eggs and fry until foamy.
  5. Add minced Garlic and Ginger and fry further.
  6. Set aside.



  1.  Marinade the Chicken with Sugar, Cooking Rice Wine, Pepper and Salt for 30 minutes.
  2. Add Egg and mix well.
  3. Lightly coat the Chicken with Potato Starch and fry with heated cooking oil until golden brown. 
  4. Drain and set aside.



  1.  Heat 1 tbsp of cooking Oil and add Butter and fry until the Butter melted.
  2. Add Chilli and Curry Leaves and fry until fragrant.
  3. Add the fried Chicken and toss well.
  4. Add the Salted Eggs and toss well.




I kind of loves this dish. 
Cream outside and crispy inside.....yummy.
